['Dals' are the principle source of protein in Indian food, and a generic Hindi name for soup-like entrees made with various lentils & beans, best eaten with rice or Indian breads.]

Panchratna Dal - A luxurious recipe using five different lentils simmered in delicate spices

Dal Maharani -  A specialty of Punjab, a selection of beans & lentils that make for a robust and delicious dish.

Dal Makhani - An exotically spiced entree, with a delicate blend of black beans & red kidney beans in a creamy tomato sauce.

Tarka Dal - Puree of lentil gently tempered with fresh herbs and seasonings. This simple spectacular delicacy (a comfort food in every Indian home) is best eaten with rice, a vegetable side and a pickle.

Sindhi Sai Bhaji - A delicious amalgam of spinach, dill and fenugreek greens, split peas and vegetables

Shevga-chi Dal - Drumstick vegetable cooked with lentils & mild spices.

Rajma
- protein rich, red kidney beans seasoned with spices in an onion-tomato gravy

Peshawari Chana - Chickpeas/garbonzo beans in a curried sauce it's flavour enhanced with ginger and mango powder.

Chowli - Black-eye peas prepared with tomatoes and onions, spiced with mustard seeds and tamarind

Soya kheema - Savoury mince prepared from Soya (TVP), with green peas, potatoes and spices

 

Chicken Zaibunissa - Tender chicken pieces coated in a fragrant yoghurt sauce

Chicken Shahjahani -  Rich cream sauce infused with spices coats boneless chicken pieces

Nawabi Murgh - Boneless chicken pieces cooked along with variety of rich nuts (ground) and herbs in a yoghurt-based sauce

Chicken Jaipuri
- Chicken cooked in a gentle tomato-based cream sauce

Moghlai Chicken - (with bone) Chicken cooked gently with yogurt, herbs, spices, and cashews

Murgh Methi - Tender pieces of chicken cooked with fresh fenugreek, cumin and coriander, a specialty from Hyderabad

Hari Murgh - Sensational green sauce that coats tender marinated boneless chicken breast cubes.

Murgh Saagwala - Taste sensation, tender pieces of chicken cooked in spinach, ginger and fresh chillies

Murg Palak Makhani - Succulent boneless chicken pieces simmered in a buttered tangy tomato sauce with a hint of fresh spinach

Butter Chicken (Murgh Makhani) - Marinated, then grilled boneless chicken cubes cooked in a mild tomato & butter-rich sauce

Chicken Vindaloo
- For lovers of hot, spicy foods - a dish from Goa - chicken in a red chili-vinegar & coconut curry stewed with potatoes.

Chicken Chettinaad - From Chennai (Madras), jointed chicken fried with onions and spices - very aromatic and spicy

Andhra Chicken Chili - A very spicy (handful of green chillies) & aromatic preparation from Andhra Pradesh, a southern Indian state

Chicken 65 - A menu favourite at trucker stops on highways in South India

Danka Murghi - Whole chicken, marinated overnight, then slow cooked in a spiced yogurt sauce with herbs

Aakha Murgh - Whole chicken cooked in a wok with aromatic spices - the gourmet alternative to the whole roasted chicken from the grocery store!

Anglo-Indian Coconut Stew - A family heirloom, a delicious & warming vegetable and chicken stew from Madras

Jardaloo Murghi - Chicken cooked in the Parsi style with apricots & spices

Jhinga (Prawn) Pulao - Aromatic basmati rice is cooked with onions, peas and shrimp with spices.

Rasam - Spicy 'pepper water' from South India, that will invigorate your sinuses, and tone your digestive system

Anglo-Indian Scotch Broth - Barley & vegetables cooked in a lightly spiced chicken broth

Bhindi Masala
- Chopped okra (lady fingers) cooked with onions and tomatoes

Bhindi-Alu Fry - Sliced okra lightly fried with potatoes in dry spices

Dum Aloo
- Potatoes, scooped and filled with cheese and dry fruits, shimmered in a rich tomato based sauce

Egg (Andaa) Curry
- A delicious curry with whole boiled eggs, to be eaten with white rice.

Karela Masala
- Indian bitter gourd, outstanding in its medicinal properties, sliced and stir fried with onions & spices in a sweet and sour sauce

Kashmiri
Dum Aalu - Potatoes coated in a spice-infused yoghurt & almond sauce

Knolkol/Kohlrabi Greens - A Kashmiri favourite, this is a delicately spiced  dish using the greens of kohlrabi. Also known as Ganth Gobhi in Punjab [Seasonal]

Knolkol/Kohlrabi/Shalgam with Dry Fruit - An unusual turnip dish with caramelized raisins and coconut

Lauki/Doodhi- Bottle gourd cooked in a lightly spiced sauce

Meetha Kaadoo
- butternut squash (or pumpkin) is lightly spiced in sweet & sour seasonings

Methi Aaloo - Diced potatoes sautéed with fresh (or sun-dried) fenugreek

Undhiyu - A winter specialty from Gujarat, a mix of vegetables coated in aromatic sauce

Paneer Matar - Green peas and paneer (Indian cheese) cooked in a blend of delicious spices

Paneer Jalfrezi - Stir fried paneer with selected vegetables and herbs

Palak Paneer - Spinach & cubed paneer seasoned with delicate spices

Paneer Makhanwala - Paneer in a rich and delicious creamy sauce, finished with butter A special delicacy.

Ratalu ni bhaji - Sweet potatoes or garnet yams, diced and sautéed with spices

Tindli
- Tender baby Indian gherkins, sweet and mild in taste, cooked with in a lightly spiced tomato sauce

Tomato-Coconut Rasa - A mild, tangy coconut-tomato curry tempered with aromatic spices

Turai - Ridge gourd cooked with potatoes in a light tangy curry sauce

 

Chaawal - Plain white basmati rice, very aromatic with a delicate grain

Jeera Pulao - The king of rice 'basmati' is flavoured with cumin & spices

Matar Pulao
- Fragrant long-grained Basmati rice with delicately spiced green peas

Vegetable Pulao - Basmati rice cooked with a medley of vegetables such as carrots, peas or corn

Khichdi - A nutritious, balanced dish made of rice and lentils. A comfort food in many Indian homes.

Kashmiri Pulao - Aromatic Indian basmati rice cooked with dried fruits and nuts

Indian Breads - (frozen) Choice of naan, chapati/roti, paratha, stuffed paratha

Khamang Kaakdi - A refreshing cucumber and yogurt raita

Paalak Raita - A mix of spinach and yogurt, topped with mustard seeds and dried red whole chili

Katchumber Raita - Finely chopped onions, tomatoes, fresh coriander leaves and green chillies, tossed in herbs, spices, and lemon juice

Cabbage salad - A crunchy refreshing salad with shredded cabbage & tomatoes

Dahi Aloo Raita - Whipped yogurt blended with cubed potatoes, chopped onions, tomatoes, fresh coriander, and herbs

Boondi Raita - Spiced yogurt with tiny chickpea flour puffs and herbs

Tom Yum Goong - A hot and spicy (shrimp, chicken or vegetable) soup, flavoured with lemongrass, kaffir lime leaves, Thai basil.

   

 


Chicken and Broccoli Stir-Fry - Sliced chicken in garlic sauce with broccoli florets

Ginger Chicken Stir Fry- Marinated stir fried strips of chicken breast in a ginger soy sauce.

Spicy Chicken Stir-Fry
* - Stir-fry with chicken breast, cabbage and mushroom in a hot Sichuan red pepper sauce.

Ma Po Tofu* - Sichuan style bean curd cooked with minced pork (or chicken) and served in hot chilli and pepper. Goes well with rice.

Spicy Shrimp & Tofu Stir Fry - Stir friend shrimp and tofu paired in a spicy sauce with mushroom & peas.

* - Chicken (whole, or in pieces) marinated in a spicy, piquant marinade, then grilled. Of Portuguese and African origin, spicy-hot 'Frango Piri-Piri' is so popular in Portugal that it is regarded as a Portuguese dish. Eaten with pao (bread rolls or sourdough bread)

Frango na Pucara*
From the home of the Port wine, Oporto, comes this flavourful chicken dish - jointed chicken casseroled with port wine and mustard. Served with potatoes.
